Fava, Turkish Meze

Merhaba! Today’s recipe is one of the simplest “meze”s of the Turkish Cuisine, Fava . It is simple but it is so delicious and very good especially with sea food.  This recipe is from my granny and it is different from most of the recipes I have read. But what do they say, details make difference ☺️

Ingredients for 4 people

1 cup unshelled horse bean

1 small onion

1/2 tsp salt

1/2 tsp sugar

1 tbsp olive oil

Before mashing after cooking, 1 tbsp olive oil , 1/2 lemon juice , if you like you can add  some dill finely chopped.

Wash the beans and put them in a skillet with water which is three times more of their volume, so with 3 cups of water and salt, sugar, olive oil and  whole onion just sliced in two. Let it cook in medium heat without a lid because it can overflow easily. If its water is all gone and still looks like uncooked , you can always add a small amount of boiled water. How will you understand it is nicely cooked , you stir and try to mash them with a spoon, if they became puree so easily they are done. You add lemon juice and olive oil ( and dill if you like) in the skillet and use a hand mixer to mash them all. Since they get hardened so quick you must put the mash in your preferred tins or cups. Serve them with lemon juice after chilled.
